The Cheese Interviews: wine and cheese pairings with wine blogger Filivino!

Welcome to the first of a new series all about cheese and their perfect pairings! This week, we got together with wine and travel blogger Filivino to chat about cheese and its bestest pal… you guessed it, wine!

As we all know, wine and cheese pairings are pure perfection! Which wine and which cheese are your favorite pair?!

“I am always up for any wine and cheese pairing, no matter what the combo. But one that always stands out to me is the combination of a mild bleu cheese paired with a chilled, sweet Sauternes. The sweet, acidity cuts through the rich, pungent bleu cheese in perfect compliment.”

FilivinoIf you were to go to a desert island and were able to take one bottle of wine with you, which would it be? 

“I’m stuck on an island again? How does this keep happening? Luckily I’m prepared this time and have brought a V. Sattui Gamay Rouge. It’s an easy drinking rose that goes very well with most things, or nothing at all. And it definitely goes well paired with a hot, island day.”

There are so many different types of cheeses out there it’s impossible to keep track! What’s your favorite type of cheese? 

“I love nearly all cheeses, but the one I can always just pick up and have a chunk of, unfailingly is a nice hunk of extra sharp cheddar cheese. The strong zest that turns into a creamy smoothness in your mouth is always welcome, and never questioned.”

In your opinion, which wine goes best with tangy, sharp cheddar?

“My favorite wine to go with a nice sharp cheddar is a full-bodied Pinot Noir. The light oakiness underscores the strong tang of the cheese, while the earthiness helps round out the flavors.”

…And beautifully rustic, smoked cheddar?

“With any smoked cheese it is important to have a wine on hand that’s not going to try and compete with the strong high notes of the cheese. This is especially important with smoked cheddar since so many strong flavors abound. My favorite pairing is a Grenache that offers floral and spice notes that sit along side the smoky, tanginess of  smoked cheddar.”

Describe your ideal cheeseboard! What would feature?

“Everything All of the cheese. A soft, earthy Emmenthaler, Black Truffle Goat, Aged Sharp Cheddar, Smoked Gouda, Pecorino Romano, Mild Bleu Cheese, Dried Apricots, Marcona Almods, Charcuteries, and all of the rest of the cheeses that exist!”

What’s your top tip for pairing cheese and wine? 

“The Bleu & Sauternes Combo, you just can’t eat too much of it!”
