Ultimate Nachos Recipe - Mexican magic!

Not quite a meal and bigger than a snack, nachos are an in-between creation that is sure to satisfy savory cravings. Our Ultimate Nachos are not only quick and easy to make, they are also super scrummy (and vegetarian-friendly). The nachos are complete with a homemade salsa, smashed avocado guacamole and sour cream topping. Treat yourself to a Mexican classic!

Taking no longer than 20 minutes to prepare, this recipe will serve 2 people. It’s great to share with a partner, friend, or family member. That said, you could always polish it off yourself…

Ultimate Nachos Recipe – Mexican magic!

Prep & Cook Time: 20 mins             Skill level: Easy             Serves: 2-3

Ingredients needed:

  • For the guacamole:
  • 2 avocados, skinned, stoned, and chopped
  • 1 lime, juice only
  • 1 green chili, seeded and finely chopped
  • Salt and pepper to taste
  • For the salsa:
  • 3 salad tomatoes, seeded and finely chopped
  • 1/2 small red onion, finely chopped
  • 1 red chili, seeded and finely chopped
  • 1 lime, juice only
  • 1oz fresh coriander leaves, chopped
  • Salt and pepper to taste
  • For the nachos:
  • 2 7oz bags plain tortilla chips
  • 3oz Westminster Farmer’s Reserve Cheddar, grated
  • 3oz Westminster Non-GMO Sharp Cheddar, grated
  • To serve:
  • 8oz pot soured cream
  • 8oz jar jalapeño chillies, drained, finely chopped

Let's get cooking:

  1. Preheat the oven to 400F.
  2. In a bowl mash all of the guacamole ingredients together with a fork. A smooth or lumpy texture is up to you! Cover the bowl with cling film and place in the fridge until needed.
  3. For the salsa, mix all of the salsa ingredients together in a bowl. Cover with cling film and set aside on the counter until needed.
  4. Scatter one 7oz bag of tortilla chips into a large ovenproof dish. Sprinkle 3oz of grated Westminster Farmer’s Reserve Cheddar over the top.
  5. Repeat the process, layering the other 7oz bag of tortilla chips on top of the cheese. On top of the new layer of tortilla chips, sprinkle 3oz of grated Westminster Non-GMO Sharp Cheddar.
  6. Place in the preheated oven. Leave in the oven until the cheese has melted, checking at regular two minute intervals. It should take no more than six minutes to bake in total.
  7. Remove from oven. To serve, dollop on the salsa, guacamole, sour cream and as many jalapeños as you dare!
