Delightful Cheese Biscuits

Similar in texture to the English scone, they’re the perfect base for your favorite fillings, but remember they’re always best eaten on the day they’re cooked. 

Here’s our top tip. If you’ve any left-over pop them in a freezer bag and defrost the night before you’re planning a big breakfast cook up – slice in half – spread with butter and fry.  Served with bacon and egg this is one breakfast that’s hard to beat.

 

Delightful Cheese Biscuits

Prep & Cook Time:  15 mins prep & 12-15 minutes cooking  Skill level:  Easy  Serves: approx. 10 biscuits

Ingredients needed:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon granulated sugar
  • ¾ teaspoon salt
  • ½ teaspoon garlic powder
  • ¼ teaspoon cayenne pepper
  • 4 ounces Westminster Cheddar or Rustic Red Cheddar, shredded (about 1 cup shredded)
  • 1 cup buttermilk, cold
  • ½ cup unsalted butter, melted and cooled for 5 minutes
  • For the topping:
  • 2 tablespoons unsalted butter, melted, divided
  • ½ teaspoon garlic powder
  • 1 teaspoon minced fresh parsley (or ¼ teaspoon dried)

Let's get cooking:

  1. Preheat oven 475° F. Line a baking sheet with parchment paper.
  2. In a large bowl, whisk the flour, baking powder, baking soda, sugar, salt, garlic powder and cayenne together. Stir in the cheddar and set aside.
  3. In a medium bowl, stir together the melted butter and butter milk – you need the mixture to form small clumps.
  4. Then, add the buttermilk mixture to the flour mixture, gently mixing with a spatula until a dough forms, picking up all the dry ingredients.
  5. Either using a greased ¼-cup measuring cup to scoop out portions of dough or old-fashioned guesswork, place the biscuits on prepared baking sheet with an inch between each to allow for expansion.
  6. Bake until golden brown, about 12 minutes. Whilst baking, prepare the topping.
  7. Mix together 2 tablespoons melted butter, garlic powder and parsley.
  8. Remove the biscuits from the oven and brush straight away with the topping mixture.
  9. Allow to cool for at least 5 minutes before serving. Enjoy!
