At Westminster, we’re all about creating our cheddar just as nature intended. With wholesome, authentic ingredients, we’ve produced lovingly made old English cheese in the south-English countryside since 1833, making us the oldest and most experienced cheddar producers in the world!
Proud of our heritage, we’re all about providing the highest quality cheese from organically sourced milk; our cows eat natural food and are free to relax and roam on our beautiful English farms.
We look after our cows at our two cheese farms: Maryland Farm in Ditcheat, Somerset, where it all began with the Barber family just 11 miles from Cheddar village itself! And Laurels Farm, in the heart of the beautiful Cheshire countryside.
In Somerset, Maryland Farm comprises of almost 3,000 acres of beautiful pasture, catering for 2,000 loved Holstein Friesian cows. Up in Cheshire, the ‘Helton herd’, a strong herd of 300 cows, are based at the family’s Parkes Farm. Each with their own names, the Helton herd have mattresses to sleep on, and regularly have their hooves manicured and music to listen to – it’s a pamper paradise for these cattle!
Life on the farm is luxurious for our animals, who have always been looked after by the same family of farmers – the Barbers – now in their sixth generation of managing the cheese farms. Maintaining traditional values of producing premium, quality cheddar cheese, the Barbers are all about animal welfare and experiencing wildlife where they belong – in the wild.
Our farms in Somerset and Cheshire are part of endless fields of gorgeous green countryside, home to plenty of English wildlife and a variety of nature. Cows brought up around other wildlife and in natural, fresh-air environments feel more relaxed, and are able to produce the quality, creamy milk that our cheddar requires for that silky smooth taste sensation.
It’s thanks to our farms that we are so proud of what we produce at Westminster, which is why we continue to look after our cows and the English countryside environments through which they are free to enjoy nature.
